On imafoodblog Sara made pulled chicken sandwiches. I LOVE pulled pork and had not thought to make pulled chicken until now.
Coincidentally, my sister Laura had given me a William-Sonoma gift card for my birthday and last week I bought some Carolina Kick BBQ sauce. This BBQ sauce is very vinegary and I LOVE it. (I love vinegar especially on French fries!)

What good fortune to see that post and have the BBQ sauce in the cupboard. (I often buy things that look interesting so cooking from the cupboard is fun.)
I poached a couple chicken breasts in a little apple cider vinegar, water, and a touch of olive oil.

I pulled the chicken out of the pot, shredded it, and dumped the poaching liquid.

I put the shredded chicken back in the pot with the BBQ sauce.

Delicious! As good as any pulled pork sandwich I’ve had!

The homemade kaiser rolls Sara makes are KEY to this. She SHOULD be posting about them soon. For a yeast risen dough, they are super easy. ~3 hours from start to finish and no complicated technique required.
