quick and easy waffles

So I’ve been a bit busy lately (new job, new commute, doing a triathlon, starting training for a half marathon…) and instead of making real waffles in the waffle iron (which I love) I’ve been making Kashi frozen waffles in the toaster oven.

Not home-made but great after a longer commute with Cubs traffic and before a 3.5 mile run.

nyc mayor

NY Times has an article on their mayor, his bad food habits, and his food policies. I am not sure I like the idea of banning trans fats and requiring lower salt in restaurant food. I want less trans fats and less sodium in food but I don’t like the idea of the government of telling me what to eat. Given the obesity problems, maybe we need it…Can’t we get people to voluntarily eat better?

I am also supposed to post 7 facts about me:

1. I am a runner and I wear my Tiffany’s necklace/medal from the 2008 Nike Half Marathon all the time

2. I read 2 or 3 books a week (I just finished Monica Seles’s book)

3. After years of making fun of mac users, I am considering getting one

4. I absolutely love tv on dvd (Sopranos , Alias, Mad Men, Wonderfalls, Dark Angel…)

5. I was a candystriper when I was in high school

6. I’ve practiced yoga for 12 yrs

7. I wasn’t sure about moving into the city but now I can’t imagine leaving

With my bounty of apples, I made a lovely salad. I diced the apples, and tossed them with arugula and crumbled blue cheese. I made a quick dressing of orange oil and white balsamic vinegar and threw it on the salad. Delicious!

end of summer

Summer’s ending (school’s already started in my neighborhood) but there are are a few ears of corn left to be eaten. Corn on the cob is summer to me. All you need is the corn, a slice (or 3) of watermelon, and the chlorine smell from a pool.

I usually boil the corn or wrap it in saran wrap and microwave for a few min, and throw salt and a pad of butter on it.

Delicious and easy!
