So Pat usually doesn’t have much of an opinion about whats for dinner around here. There’s stuff he likes more than other things but basically I plan all the meals and he’s happy to help with grunt work and eats whatever I make. This soup is the one thing he requests regularly.
Its a good soup with chicken, veggies, and what seems like rice but is actually orzo, a rice-looking pasta, and the whole thing is thickened with eggs.
Lemon Orzo Soup or Pat’s Favorite
adapted from Ellie Krieger’s The Food You Crave
1 chicken breast
2 tbsp olive oil
1/4 cup shredded carrots
2 celery stocks chopped into bite size pieces
5 cups chicken or vegetable stock
1 tsp dried thyme
1/2 cup orzo
salt and pepper to taste
First the chicken is browned in olive oil. It’s removed from the pan and a little olive oil is added and the chopped veggies are sauted.
5 cups of the chicken stock is added to the veggies after they are softened and the thyme is added. The soup is brought to a boil and the orzo is added and cooked for 8 min. After that, the soup should be kept at a simmer.
1 cup of the chicken stock is brought to a simmer while the eggs are beaten in a bowl. The eggs are tempered with the stock by adding small portions of the stock to the eggs and mixing well. After the eggs and stock are incorporated, add them to the soup and mix. Add the chicken back. Salt and pepper to taste. Keep the soup below a boil and enjoy!
