I started watching Mexico One Plate at a Time this year and fell in love with Rick Bayless‘s recipes. Strangely so did Pat. If I want to get him on board with a recipe or a cooking idea, I just have to say Rick Bayless likes it and Pat’s into it.
I found the book Mexican Everyday and bought it. I love quick meals that are still meals and this cookbook has that. Another great feature is that he offers riffs on the dishes. One of the dishes uses potatoes in the fall, and asparagus in the spring. I love that versatility. I will adapt recipes on my own to whats in season and what I have but I think it’s cool to have an outline.
