I saved some meatballs in the fridge and froze others. I reached for them when trying to think of a quick dinner for one.
I started the water boiling for the pasta (I would have preferred spaghetti but I only had penne).
I heated some olive oil and a few cloves of garlic with a few meatballs over a low flame for a few minutes, then let them sit off heat and covered.
I poured the pasta and frozen peas into the boiling water. While they cooked, I grated the parmesan.
After draining the pasta and peas, I tossed them into the pan with meatballs with a little butter for flavor. I served the dish with the grated Parm.
It was fantastic, especially for 20-25 min of effort.
I’ve noticed since I started the blog how much pasta I eat. It’s pretty tasty, versatile, and not too bad for you.
