I wasn’t feeling well last week so Pat offered to make chicken tacos.
He chopped about 3/4 lb of boneless, skinless chicken breast. He sprinkled the chicken with salt, red pepper flakes, cumin, and paprika and browned it in a little olive oil.
An orange and a yellow bell pepper and half an onion were roughly chopped. Pat then pulsed them in the food processor to make small pieces.
The vegetables went into the pan with chicken and were cooked until they were softened. Just before he took the pan off the burner, Pat added about 2 tbsp of lemon juice.
Pat put the chicken and vegetables into warmed flour tortillas with a little shredded cheese.
I started feeling better imeadiately.
