For Valentine’s Day, my parents gave me Barefoot Contessa Back to Basics: Fabulous Flavor from Simple Ingredients. I had been admiring my sister’s copy and she told them they should buy me a copy. I’ve been flipping through it, drooling over all the recipes.
I know the first recipe I make should be something grand but I actually picked her baked potato. It’s simple and I love them.
I washed the potato and put it in the oven at 400F while I went off and did other things. Ina said the potato didn’t need fork pricks so I left it alone. The potato was fine-I have wasted a lot of time putting fork marks in potatoes for apparently no reason.
I mixed together a tbsp of sour cream and a tbsp of Greek yogurt with some chopped chives, salt, and pepper.
It’s one those things you don’t think you should need a recipe for but this recipe is great. I loved the yogurt with sour cream.
