I obviously love pasta and decided to make a Giada De Laurentis recipe of pasta, cherry tomatoes, and lemons after flipping through Giada’s Kitchen. The recipe also called for grean beans but I subbed in broccoli.
I cooked the frozen broccoli with pasta while I chopped a clove of garlic and the tomatoes-they looked gorgeous-and zested a lemon.
I pulled the broccoli out of the boiling water with a strainer and warmed a little olive oil. I let the excess water come of the vegetables and tossed them into the pan with the chopped tomatoes.
I drained the pasta and tossed it in the pan with the lemon zest with grated parm, salt and pepper.
Did you notice anything missing? I did after a bite or two…The ricotta. I added a tbsp to each serving and mixed well. It was great with the forgotten ricotta.
