I tried peapod-the grocery home delivery service- for the first time (I had a $20 off coupon) this week. It was quite nice to pick out my groceries online and have them just show up. Particularly the cat food which is just annoying to carry a couple blocks from where I park my car to the apartment, and up the stairs. Anyway, they had flank steak on sale and I bought some with the idea of doing something fajita-esque.
I pulled open my Mexican Everyday cookbook and started flipping. I came upon Smokey Chipotle Rub. I didn’t have any ground chipotle chile but I did have some dried Thai chiles.
Last weekend, I was out shopping with my sister when I came across the chiles and thought I could find something interesting to do with it.
I chopped up one chile and discarded most of the seeds. I also chopped up a garlic clove, and tossed them with paprika, sugar, pepper, and salt.
I cut the steak into pieces, mixed a little olive oil with the rub, and spread it onto the steak. I let that sit while I chopped half an onion and the remaining heirloom tomatoes.
I heated a little olive oil in a skillet and added the veggies. They cooked a while and were removed from the skillet. The steak went into skillet with a little more olive oil. After the steak was browned, I added the veggies back in and let everything meld for a few minutes.
I served them with tortillas and they were great with just enough heat. I am glad I went with only one Thai chile and got rid of most of the seeds.
1 chopped garlic clove
2 tbsp paprika
1 chopped, dried Thai chile
1 tsp sugar
Mix ingredients together until blended.
