I like to change up pesto-which is delicious-by switching out the basil with other things occasinally. I love pesto and peas are my favorite vegetable so combining them is a natural.
This time I steamed peas and a little spinach. As soon as the veggies were cooked, I put them in the food processor and let them cool with the lid open while I made some al dente pasta.
I whirled the veggies in the food processor, slowly adding olive oil. Pine nuts and parmesan are usual ingredients in pesto although I sub in walnuts all the time. This time I just threw in some parmesan.
I tossed the pasta with the pesto and saved the remaining pesto in the freezer. I really like the sweetness of the peas with the pasta. Pat enjoyed it as well even though he’s not much of a pea fan.
