I flipped through Rick Bayless’s Mexican Everyday after seeing tomatillos at the grocery store. I saw his recipe for tomatillo salsa which has the suggestion to use the salsa as a sauce over chicken.
I decided to do that with potatoes. I roasted the tomatillos and threw them in the blender with onion, chili pepper flakes (I didn’t have any jalapenos), and cumin (the recipe didn’t call for it but I love it). The recipe did call for cilantro which I don’t hate but I don’t love and since we didn’t have any I just left it out.
I cooked the chicken and halved new potatoes in the sauce with a little extra chicken stock.
Pat came home and said he was so happy that the great smell was coming from our apartment-hope our neighbors were happy with that too.
Definitely a great addition to our repertoire.
